Why are we advised to switch to a jig when casting with a 'jump-type' lure? ie, why not just use a spoonplug and let it keep falling back to the bottom?

Good question. I don't know the answer but I can make a guess. I can picture the possibility of line twist. The S/P was designed to bump and swim hence the up and down motion might just be conducive to twisting. Although it would probably catch fish at one time or another.
